Why Do Coffee from Bali, Toraja, and Flores Have Different Characteristics?
As a major coffee producing region in Indonesia, Bali, Toraja, and Flores are well known for producing high quality Arabica coffee. Despite that, arabica coffee from these three origins have remarkably different characteristics, from flavor and aroma to body and intensity.
Understanding these differences can help you find the coffee that best suits your preferences. Let’s take a closer look at the unique characteristics of each origin.
Bali Kintamani Coffee
Kintamani coffee is known for its citrusy flavor profile, with notes reminiscent of orange peel and grapefruit that create a fresh and refreshing sensation on the palate. With its light to medium body, this coffee is a great choice for those who prefer a lighter tasting coffee.
The refreshing character of this coffee is closely associated with the volcanic soil on the slopes of Mount Batur and the traditional intercropping system maintained by local farmers.
In this system, coffee plants are grown alongside orange trees on the same land. The orange trees provide partial shade for the coffee plants and help retain soil moisture, while the roots of both crops share the same volcanic soil and its nutrients.
Local farmers believe that growing coffee and orange trees in close proximity contributes to both the flavor and aroma of the coffee, hence the citrus notes. This tradition has also become part of the identity and culture of Kintamani coffee.
Toraja Coffee
Different from Kintamani coffee, Toraja coffee is more known for its cocoa and grapefruit notes, complemented by a distinctive chocolate aroma.
Toraja coffee tends to taste bolder and more intense than coffee from the other two origins, making it a good choice for coffee lovers who enjoy a richer flavor while still looking for a velvety, smooth mouthfeel.
Interestingly, Toraja coffee is often nicknamed “The Queen of Coffee” because its prestige of premium quality with an elegant and distinctive flavor profile. It has also become one of Indonesia’s most notable agricultural export commodities and has received recognition from the Ministry of Agriculture of the Republic of Indonesia.
The balance between its flavorful chocolate notes and aroma gives Toraja coffee a unique appeal, making it highly sought after by coffee enthusiasts both in Indonesia and internationally.
Flores Coffee
Flores coffee offers a distinctive flavor profile featuring dark chocolate and roasted notes, with a medium to bold body.
Perfect for coffee lovers who enjoy medium-bodied coffee and warmer notes with a relatively low acidity.
The character of Flores coffee is also influenced by traditional cultivation practices that preserve the coffee’s natural flavor profile, where it is cultivated on volcanic mountain slopes with minimal use of chemical inputs, allowing the characteristics of the growing environment to remain an important part of the coffee’s identity.
All Arabica, Yet So Different. Why?
According to the National Coffee Association (NCA) of the United States, the flavor and notes of Arabica coffee from each origin are influenced by a combination of terroir factors, including soil conditions, microclimate, sunlight, and altitude.
Although Kintamani, Toraja, and Flores coffee are all grown in highlands , the soil and climate conditions in each region are different.
Kintamani coffee grows in volcanic soil alongside orange trees. Meanwhile, Toraja coffee grows in soil rich with volcanic ash surrounded by cool mountain air, and Flores coffee is cultivated on volcanic slopes with its own distinct soil characteristics.
Other factors such as cultivation methods and post-harvest processing techniques passed down through generations, add further layers of flavor variation.
This combination of various factors is what gives Arabica coffee from Indonesia such a diverse range of characters from one region to another, even though it’s all Arabica as well.
